CONDITIONS TO KEEP WINES

The place where the wines are located does not have to undergo abrupt changes of temperature, this would have to oscillate between the 12ºCs and the 18ºCs.
The humidity of the enclosure must be around 50%. It must not have direct light, since this produces molecular alterations that with time spoil wines.
The bottles must be always laid down so that the wine is in contact with the enemy with the cork and this not reseque.

THAT WINES TO KEEP

  • The targets must drink young, their virtues stay just a short time in the bottle.
  • The frothy ones do not have to be kept.
  • For the pink ones the same guidelines are due to respect that stop the targets.
  • The red young people, frutados are of short guard (2 years).
  • The red raisings and bred reserves in oak are most durable, and improve in bottle during 4 to 6 years.

TEMPERATURAS IDEALES DE SERVICIO

Sparkling Wines.........................................5ºC a 7ºC

White and Rose.........................................6ºC a 8ºC

Red.......................................................16ºC a 18ºC

 

HOW TO TASTE WINE

I am going to give you a short explanation: Wine is tasted in 3 stages using : the eye to see the color; the nose to smell ; and the palate to taste. 

1)    the color : It can depend on the grape variety and the extraction .We have red wines , with light , medium or deep red colors.  

2) The nose: Hold the glass without swirling and smell the wine. After swirl the wine in the glass 2 or 3 times to help the wine release the aromas. 

3) Finaly the palate : Sip the wine and look for a first impression at the front of the mouth ( we call it : the attack) .It will be : soft, fruity or powerful.

Then, allow the wine to pass over the tongue and move it around the mouth to release more flavours.  The texture will be smooth , round, fleshy , dry, nice acidity, etc.. 

Now you can select the : TYPICAL FOOD PAIRING.

To obtain an harmonius wine, we need fruit, acid and tannin in perfect balance.
