The Winery
The founder of the winery:
D. Angel Garcia Sanz,
using conventional winemaking methods since 1970 in
the old tradition of grape growers and winemakers,
decide to found the "Santa
Rufina" winery. The winery is a family
business. The winery is located in the town of
Cubillas de Santa Marta in the province of
Valladolid and belongs to the Cigales Appellation of
Origin.

It owns 84 Hectares of vineyard, of which 80% are
the tempranillo, 10% of merlot, 5% cabernet
sauvignon with teh remaining 5% comprised by the
"Verdejo" and "Albillo" white varieties.
Located in an area on
the terraced hillsides of the Pisuerga River, the
soil of our Pagos de Sallana estate, which enjoys an
excellent reputation in the Cigales Appellation of
Origin, is ideal for the maturity of the grapes, on
account of the climate and the stony terrain, well
suited for releasing at night the heat accumulated
throughout the day.

The winery is
equipped with the technological resources
necessary in order to ensure meticulous
winemaking:

1,800 Casks. 70% American Oak and
30% French Oak.

The soils are sand,
limestone, gypsum loam, resting on clay and marls. There is scant
organic matter (from 0.7% to 1.6%), with a variable amount of
limestone (between 1% and 35%), sufficient potassium, little
phosphorus and a pH of 8.1.

The vineyards
are all located around the winery and,
as a result, the time that transpires
between the harvesting of the grapes and
their delivery and processing in the
winery is minimal.
Of the 84 hectares of vineyard, 40% are
at least one hundred years old. |

The care and maintenance of the hundred-year-old
vineyards is performed according to traditional
practises. The human hand
is the basic tool that cares for and selects
each of the vines in order to obtain excellent
wines.
No mineral fertilizers
of any kind whatsoever are used in the
plantations. Only organic matter is added to the
soil, in the form of sheep manure.
